DA KONA RESTAURANT

At Da Kona, our dining experience is an intimate reflection of our character and location. Set in the grand surroundings of Wyndham Trenython Manor, you can enjoy sophisticated evening dining and a traditional Sunday Roast lunch in a relaxed, yet refined, environment. From a seasonal menu conceived by our acclaimed Head Chef, Mauricio Zambrano, all dishes are exquisitely cooked to order based on the finest locally sourced produce available.

GROUNDED IN TRADITION AND CULTURE

Da Kona’s lavish surroundings breathe an air of decadence, suggestive of the Manor itself. The décor features carved oak walls which date back to 1891 and combine with elegant stained glass windows to give a nostalgic nod to a bygone era. The floor-to-ceiling bay window filters natural light into the room and commands coastal and countryside views.

Our team are committed to first-class service. We welcome both hotel residents and non-residents and always recommend booking in advance to avoid disappointment.

DELICIOUSLY DIFFERENT

Our unique and seasonal curated two and three-course menus offer one-in-a-kind dishes. Inspired by the Manor’s coastal setting, the menu takes full advantage of the sea, where main courses such as Pan Seared Sea Bass Fillet and Fettuccini Frutti Di Mare never disappoint. Cornwall’s abundance of local produce allows us to proudly work with local suppliers and farmers to bring the best local produce to your plate. For example, our Cornish-bred beef is sourced by a butcher less than half a mile from the Manor’s front door.

We have a wine list expertly developed to complement our dishes.

MEET OUR HEAD CHEF

Originally from Ecuador, Mauricio Zambrano attended Palermo College in Argentina and honed his culinary skills at various high-end establishments throughout South America.

Mauricio’s love of cooking then took him to Galapagos Islands where he spent eight years working in 5-Star hotels, private villas and celebrity cruise ships, twice winning the coveted ‘Best Signature Lobster Dish Award’. In 2016, Mauricio moved to New York for an amazing opportunity to work at Beyond Sushi, the highly acclaimed vegan restaurant and had the privilege of attending different culinary masterclasses.

After relocating to the UK in 2018, Mauricio had distinguished spells at Burgh Island Hotel and Boringdon Hall Hotel & Spa before settling in Cornwall to add his unique stamp as Head Chef at Da Kona restaurant.
